The story of Pamako

Pamako was established in 2014 by Eftihis Androulakis, a young Cretan entrepreneur who chose to build on a family tradition spanning several generations. Together with his family and partner Dorothea Ritter, Eftihis transformed a passion for pure organic extra virgin olive oil into a producer that honors ancestral wisdom while embracing innovation.

The journey began in a rocky, mountainous area of Crete covered with olive trees that are hundreds of years old. Throughout the process, the team kept in mind the advice of their grandfathers: "to respect the trees, look after them, and they will richly reward you with their fruits." This guiding principle, passed down through generations, shapes every decision at Pamako.

Driven by youthful passion and the experience of older generations, the founders embarked on a challenging, painstaking procedure to take full advantage of what nature provided. The result is an olive oil exceptional in both taste and quality, offering all of olive oil's health benefits as the ultimate reward for their dedication and respect for tradition.

How are the products made?

Pamako's production philosophy centers on marrying tradition with cutting-edge technology to extract the best from each olive. The estate preserves traditional methods of sustainable organic cultivation and processing, integrating them with the newest technology to create a premium extra virgin olive oil.

All olives are cold-pressed within hours of harvest to preserve freshness and maximize polyphenol content. This rapid processing is essential to capturing the full spectrum of health-promoting compounds, including oleocanthal and oleacein, which give Pamako oils their distinctive peppery finish and robust character.

The hands-on approach is painstaking and deliberate, ensuring that every step—from grove management to bottling—meets the highest standards. This commitment to quality has enabled Pamako to produce oils with exceptionally high polyphenol levels, including a flagship Tsounati monovarietal containing 2,081 mg/kg of polyphenols.

Provenance

Pamako extra virgin olive oils are produced entirely from olives grown in the mountainous groves of Crete, Greece. The estate's commitment to organic cultivation ensures that every bottle reflects the pure expression of this exceptional terroir.

The producer specializes in both organic blends and monovarietal oils from the rare Tsounati variety, a cultivar prized for its high polyphenol content and distinctive flavor profile. Each harvest is carefully timed and executed by hand to capture the olives at their optimal stage of ripeness.

Pamako is one of the few olive oil producers worldwide to carry a certified health claim on its label in accordance with EU regulation 432/2012, a distinction that confirms the exceptionally high phenolic content of its oils. This certification provides transparent, verifiable proof of the health-promoting properties contained in every bottle.

Sustainability

Pamako follows traditional methods of sustainable organic cultivation, respecting the natural rhythms of the olive trees and the mountain ecosystem. The estate's approach is guided by the ancestral wisdom to "respect the trees, look after them, and they will richly reward you with their fruits."

The organic certification reflects a commitment to farming without synthetic pesticides or fertilizers, allowing the ancient olive trees and surrounding environment to thrive naturally. This approach not only protects the land for future generations but also ensures the purity and health benefits of the final product.

By maintaining olive trees that are hundreds of years old, Pamako demonstrates a long-term stewardship philosophy that values preservation over short-term gain. The integration of modern technology serves to enhance efficiency and quality without compromising the sustainable practices that have sustained these groves for centuries.

What makes Pamako distinctive?

Pamako's olive groves thrive in a rocky, mountainous area of Crete, a landscape that has shaped olive cultivation for millennia. The rugged terrain and elevation create challenging growing conditions that stress the trees, encouraging them to produce olives with concentrated flavors and elevated polyphenol levels.

The estate is home to olive trees that are hundreds of years old, their gnarled trunks and deep root systems testament to generations of careful stewardship. These ancient trees draw nutrients from the mineral-rich mountain soil, contributing to the complexity and intensity of the oils.

Crete's Mediterranean climate—warm, dry summers and mild winters—provides ideal conditions for organic olive cultivation. The mountain location offers cooler temperatures and natural protection, allowing the olives to mature slowly and develop their full aromatic potential while maintaining the high polyphenol content that defines Pamako's oils.
